Ingredients (Serves 4-6)

  • 1 tablespoon olive oil
  • 1 pound (450g) ground turkey
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 cup tomato sauce or crushed tomatoes
  • 1 cup chicken broth
  • 1 tablespoon tomato paste
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon oregano
  • ¼ teaspoon salt (adjust to taste)
  • ¼ teaspoon black pepper
  • ½ teaspoon red pepper flakes (optional, for heat)

Instructions

  1. Sauté the Aromatics:

    • Heat olive oil in a large pot over medium heat.
    • Add the onion and cook for 2-3 minutes until softened.
    • Stir in the garlic and bell pepper, cooking for another 1-2 minutes.
  2. Cook the Turkey:

    • Add the ground turkey and cook until browned, breaking it up with a spatula.
    • Stir in the tomato paste and cook for 1 minute to deepen the flavour.
  3. Simmer the Chili:

    • Add the black beans, diced tomatoes, tomato sauce, and chicken broth.
    • Stir in the chili powder, cumin, smoked paprika, oregano, salt, and black pepper.
    • Bring to a gentle boil, then reduce heat and let simmer uncovered for 20-30 minutes, stirring occasionally.

    • Taste and adjust seasoning if needed.
