Ingredients (Serves 4-6)
- 1 tablespoon olive oil
- 1 pound (450g) ground turkey
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) diced tomatoes
- 1 cup tomato sauce or crushed tomatoes
- 1 cup chicken broth
- 1 tablespoon tomato paste
- 1 teaspoon chili powder
- 1 teaspoon cumin
- ½ teaspoon smoked paprika
- ½ teaspoon oregano
- ¼ teaspoon salt (adjust to taste)
- ¼ teaspoon black pepper
- ½ teaspoon red pepper flakes (optional, for heat)

- Add the onion and cook for 2-3 minutes until softened.

- Stir in the tomato paste and cook for 1 minute to deepen the flavour.

- Add the black beans, diced tomatoes, tomato sauce, and chicken broth.
- Stir in the chili powder, cumin, smoked paprika, oregano, salt, and black pepper.
- Bring to a gentle boil, then reduce heat and let simmer uncovered for 20-30 minutes, stirring occasionally.
