This Tomato & Charred Pepper Farro Salad is packed with bold flavours and wholesome ingredients. The chewy farro provides a satisfying base, while charred bell peppers add smokiness and fresh tomatoes bring brightness. Finished with a zesty dressing, this dish is both nourishing and delicious.

Ingredients:

  • 1 cup farro, rinsed
  • 2 cups water or vegetable broth
  • 1 red bell pepper, halved and seeds removed
  • 1 yellow bell pepper, halved and seeds removed
  • 1 cup cherry tomatoes, halved
  • ¼ cup red onion, thinly sliced
  • ¼ cup fresh parsley, chopped
  • ¼ cup crumbled feta (optional)
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • Juice of ½ lemon
  • Salt and black pepper to taste

Instructions:

  1. Cook the farro: In a medium pot, bring water or vegetable broth to a boil. Add farro, reduce heat, and simmer for 20-25 minutes, until tender. Drain and let cool.
  2. Char the peppers: While the farro cooks, place bell pepper halves skin-side down on a hot grill or broiler. Cook until skins are blistered and blackened, about 5-7 minutes. Let cool, then peel off charred skin and slice into thin strips.
  3. Prepare the dressing: In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, lemon juice, salt, and black pepper.
  4. Assemble the salad: In a large bowl, combine cooked farro, charred pepper slices, cherry tomatoes, red onion, and parsley. Drizzle with dressing and toss to combine.
  5. Serve: Top with crumbled feta if using, and enjoy warm or chilled.
