Tomato & Charred Pepper Farro Salad

This Tomato & Charred Pepper Farro Salad is packed with bold flavours and wholesome ingredients. The chewy farro provides a satisfying base, while charred bell peppers add smokiness and fresh tomatoes bring brightness. Finished with a zesty dressing, this dish is both nourishing and delicious.
Ingredients:
- 1 cup farro, rinsed
- 2 cups water or vegetable broth
- 1 red bell pepper, halved and seeds removed
- 1 yellow bell pepper, halved and seeds removed
- 1 cup cherry tomatoes, halved
- ¼ cup red onion, thinly sliced
- ¼ cup fresh parsley, chopped
- ¼ cup crumbled feta (optional)
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon Dijon mustard
- Juice of ½ lemon
- Salt and black pepper to taste
Instructions:
- Cook the farro: In a medium pot, bring water or vegetable broth to a boil. Add farro, reduce heat, and simmer for 20-25 minutes, until tender. Drain and let cool.
- Char the peppers: While the farro cooks, place bell pepper halves skin-side down on a hot grill or broiler. Cook until skins are blistered and blackened, about 5-7 minutes. Let cool, then peel off charred skin and slice into thin strips.
- Prepare the dressing: In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, lemon juice, salt, and black pepper.
- Assemble the salad: In a large bowl, combine cooked farro, charred pepper slices, cherry tomatoes, red onion, and parsley. Drizzle with dressing and toss to combine.
