Tempeh Lettuce Wraps

These Tempeh Lettuce Wraps are a delicious, light, and healthy meal option. Featuring smoky pan-seared tempeh, crunchy veggies, and a zesty sauce, all tucked into crisp lettuce cups, they’re perfect for a quick lunch or dinner.
Ingredients:
- 1 block (8 oz) tempeh, crumbled
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 2 tablespoons soy sauce
- 1 tablespoon hoisin sauce
- 1 teaspoon rice vinegar
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon black pepper
- 1 head butter lettuce (or romaine), leaves separated
- Optional toppings: shredded carrots, sliced green onions, sesame seeds, or crushed peanuts

Cook the Tempeh: Heat olive oil in a large skillet over medium heat. Add the onion and sauté until softened, about 3 minutes. Stir in the garlic and cook for 1 more minute.

Add the Tempeh: Crumble the tempeh into the skillet. Stir and cook for 5–7 minutes until golden and slightly crispy.

Season: Add the soy sauce, hoisin sauce, rice vinegar, smoked paprika, and black pepper. Stir well and cook for an additional 2–3 minutes until the sauce is absorbed.

Assemble Wraps: Spoon the tempeh mixture into lettuce leaves. Top with shredded carrots, green onions, sesame seeds, or crushed peanuts if desired.
