  • 3 large eggs
  • 1/2 cup fresh spinach, chopped
  • 1/4 cup feta cheese, crumbled
  • 1 tablespoon olive oil or butter
  • Salt and pepper, to taste
  • Optional: chopped tomatoes or onions for extra flavour

Instructions:

  1. Whisk the Eggs: In a bowl, whisk the eggs with a pinch of salt and pepper until well combined and slightly frothy.

  2. Sauté the Spinach: Heat olive oil or butter in a non-stick skillet over medium heat. Add the chopped spinach and sauté for 1–2 minutes until wilted.

  3. Pour in the Eggs: Reduce the heat to low and pour the whisked eggs over the spinach. Let the eggs cook undisturbed for about 2 minutes until the edges start to set.

  4. Add the Feta: Sprinkle crumbled feta cheese evenly over the omelette. Cook for another 1–2 minutes until the eggs are mostly set but still slightly soft on top.

  5. Fold and Finish: Gently fold the omelette in half and cook for another 30 seconds. Slide it onto a plate.
