This Skillet Spinach, Mushroom & Wild Rice Casserole is the perfect combination of savoury mushrooms, tender spinach, and nutty wild rice, all brought together in a creamy, cheesy sauce. It’s a comforting one-pan dish that's both satisfying and nutritious.

Ingredients:

  • 1 cup wild rice blend, rinsed and drained
  • 2 ½ cups vegetable broth
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 3 cups sliced mushrooms (cremini or button)
  • 3 garlic cloves, minced
  • 4 cups fresh spinach
  • ½ cup grated Parmesan cheese
  • ½ cup shredded mozzarella cheese
  • ½ cup heavy cream (or coconut milk for a dairy-free option)
  • Salt and pepper to taste

Instructions:

  1. Cook the Rice: In a medium pot, bring the wild rice blend and vegetable broth to a boil. Reduce heat to low, cover, and simmer for 45 minutes or until the rice is tender and the liquid is absorbed.

  2. Sauté Vegetables: Heat olive oil in a large oven-safe skillet over medium heat. Add the onion and sauté until softened, about 3–4 minutes. Add mushrooms and cook until browned, about 8 minutes. Stir in the garlic and cook for another minute.

  3. Combine Ingredients: Add the cooked rice and fresh spinach to the skillet, stirring until the spinach wilts. Stir in the heavy cream, Parmesan, and half of the mozzarella. Season with salt and pepper.

  4. Bake: Preheat the oven broiler. Sprinkle the remaining mozzarella over the top of the casserole. Place the skillet under the broiler for 3–5 minutes or until the cheese is melted and golden.
