Quick Easy Weight Loss Recipe: Spicy Quinoa & Roasted Veggie Bowl

Ingredients:
- 1 cup quinoa, rinsed
- 2 cups water or vegetable broth
- 1 medium sweet potato, diced
- 1 red bell pepper, sliced
- 1 zucchini, sliced
- 1/2 cup Brussels sprouts, halved
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1/2 teaspoon chili flakes

Instructions:
- Preheat the oven to 400°F (200°C). Toss the diced sweet potato, bell pepper, zucchini, and Brussels sprouts with olive oil, smoked paprika, cumin, chili flakes, salt, and pepper. Spread the vegetables on a baking sheet and roast for 25–30 minutes until tender and lightly caramelized.
- While the vegetables are roasting, cook the quinoa: Combine quinoa and water (or broth) in a pot and bring to a boil. Reduce the heat, cover, and simmer for 15 minutes until the quinoa is cooked and fluffy.
- Once the vegetables are done, mix them with the cooked quinoa in a large bowl.
- Drizzle with tahini and lemon juice for extra flavor, if desired.
