Instructions:

  2. Prepare the Skins: Cut the potatoes in half lengthwise. Carefully scoop out most of the flesh, leaving a ¼-inch layer inside the skin. Save the scooped potato for another recipe.

  3. Crisp the Skins: Brush the potato skins with olive oil and sprinkle with salt. Place them skin-side down on a baking sheet and bake for 10 minutes until crispy.

  4. Load with Toppings: Sprinkle the insides of each potato skin with cheddar cheese and bacon crumbles. Return to the oven and bake for an additional 5–7 minutes or until the cheese is fully melted.
