  • ¼ cup crumbled feta or shaved Parmesan (optional)

For the Dressing:

  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or maple syrup
  • 1 clove garlic, minced
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  3. Assemble the Salad:

    • Add the white beans, cherry tomatoes, red onion, and sunflower seeds to the kale.
    • Pour the dressing over the salad and toss gently to coat.
