This Hearty Vegan Chili is packed with protein-rich beans, hearty vegetables, and bold spices. It’s the perfect cozy meal that’s both nourishing and satisfying, with deep, smoky flavours and a hint of heat.

Ingredients:

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 carrot, diced
  • 1 zucchini, diced
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 2 cups vegetable broth
  • 2 tablespoons tomato paste
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • ½ teaspoon chili powder (adjust to taste)
  • Salt and black pepper to taste

Instructions:

  1. Sauté the aromatics: In a large pot, heat olive oil over medium heat. Add onion and garlic, cooking for 2-3 minutes until fragrant.
  2. Add the vegetables: Stir in bell pepper, carrot, and zucchini. Cook for another 5 minutes until softened.
  3. Build the flavour: Add diced tomatoes, tomato paste, black beans, kidney beans, vegetable broth, and all the spices. Stir well to combine.
  4. Simmer: Bring to a boil, then reduce heat and let simmer for 20-25 minutes, stirring occasionally. Adjust seasoning as needed.
  5. Serve: Ladle into bowls and enjoy hot.
