Garlic & Lemon Roasted Chickpeas with Greens

These Garlic & Lemon Roasted Chickpeas with Greens combine crispy, protein-rich chickpeas with vibrant, sautéed greens for a flavourful, nourishing dish. The combination of lemon, garlic, and a hint of spice makes it irresistibly delicious.
Ingredients:
- 1 can (15 oz) chickpeas, drained, rinsed, and patted dry
- 1½ tablespoons olive oil (divided)
- ½ teaspoon garlic powder
- ½ teaspoon smoked paprika
- ½ teaspoon cumin
- Salt and black pepper to taste
- Juice of ½ lemon
- 4 cups mixed greens (spinach, kale, or Swiss chard)
- 2 cloves garlic, minced
- Lemon zest, for garnish
Instructions:
- Roast the chickpeas: Preheat the oven to 400°F (200°C). Toss chickpeas with 1 tablespoon of olive oil, garlic powder, smoked paprika, cumin, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes, shaking halfway through, until crispy.
- Sauté the greens: In a large skillet, heat the remaining olive oil over medium heat. Add minced garlic and cook for 1 minute. Add greens and sauté until wilted, about 2-3 minutes. Squeeze in lemon juice and stir.
- Assemble: Transfer sautéed greens to a plate, top with crispy chickpeas, and garnish with lemon zest.
- Serve: Enjoy warm on its own or with a side of quinoa or warm pita bread.
