These Crispy Kale & Sweet Potato Nachos are a delightful combination of crispy baked sweet potato rounds, crunchy kale chips, and all your favourite nacho toppings. They're perfect for sharing, snacking, or a fun appetizer.

- 2 medium sweet potatoes, thinly sliced into rounds
- 2 cups kale, stems removed, torn into bite-sized pieces
- 2 tablespoons olive oil
- ½ teaspoon smoked paprika
- ½ teaspoon garlic powder
- Salt and black pepper to taste
- ½ cup shredded cheese (cheddar or plant-based)
- ½ cup black beans, drained and rinsed
- 1 small jalapeño, thinly sliced
- Salsa, guacamole, and sour cream for serving
- Preheat oven: Set oven to 400°F (200°C).
- Bake sweet potatoes: Toss sweet potato slices with 1 tablespoon olive oil, smoked paprika, salt, and pepper. Spread on a baking sheet in a single layer and bake for 20-25 minutes, flipping halfway until crispy.
