Ingredients:

  • 12 oz (340g) mixed mushrooms (cremini, button, or portobello), sliced
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil or vegan butter
  • 2 tablespoons all-purpose flour (or gluten-free flour)
  • 1 1/2 cups vegetable broth
  • 1/2 cup unsweetened plant-based milk (almond, oat, or soy)
  • 2 tablespoons soy sauce or tamari
  • 1 teaspoon smoked paprika
  • 1 tablespoon Dijon mustard
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • 8 oz (225g) pasta or noodles of choice

Instructions:

  1. Cook the Pasta: Prepare the pasta according to package instructions. Drain and set aside.

  2. Sauté the Mushrooms: In a large skillet, heat olive oil over medium heat. Add onions and cook until softened. Stir in garlic and cook for another minute. Add sliced mushrooms and sauté until they release their moisture and turn golden brown.

  3. Make the Sauce: Sprinkle flour over the mushrooms and stir to coat. Slowly add vegetable broth while stirring to avoid lumps. Pour in plant-based milk, soy sauce, smoked paprika, and Dijon mustard. Stir well and simmer for 5–7 minutes until the sauce thickens.

  4. Combine: Season with salt and pepper to taste. Add the cooked pasta to the skillet and toss until evenly coated in the sauce.
