Cauliflower Mac & Cheese
This Cauliflower Mac & Cheese is a wholesome twist on the classic comfort food. Ingredients:
- 3 cups cooked macaroni (or pasta of choice)
- 1 small head of cauliflower, cut into florets
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup milk (dairy or plant-based)
- 2 tablespoons butter (or olive oil)
- 1 teaspoon Dijon mustard
- Salt and pepper, to taste
- Optional: 1/4 cup grated Parmesan cheese or breadcrumbs for topping
Instructions:
- Steam or boil the cauliflower florets until tender. Drain and set aside.
- In a blender or food processor, combine the cooked cauliflower, milk, butter, Dijon mustard, and a pinch of salt and pepper. Blend until smooth and creamy.
- Pour the cauliflower sauce into a large pot over low heat. Stir in the shredded cheddar cheese until melted and fully incorporated.
- Add the cooked macaroni to the pot and mix until the pasta is evenly coated with the sauce.
- Optional: Transfer the mac & cheese to a baking dish, sprinkle with Parmesan or breadcrumbs, and broil for 2-3 minutes until golden brown.
