This Cauliflower Mac & Cheese is a wholesome twist on the classic comfort food. Ingredients:

  • 3 cups cooked macaroni (or pasta of choice)
  • 1 small head of cauliflower, cut into florets
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup milk (dairy or plant-based)
  • 2 tablespoons butter (or olive oil)
  • 1 teaspoon Dijon mustard
  • Salt and pepper, to taste
  • Optional: 1/4 cup grated Parmesan cheese or breadcrumbs for topping

Instructions:

  1. Steam or boil the cauliflower florets until tender. Drain and set aside.
  2. In a blender or food processor, combine the cooked cauliflower, milk, butter, Dijon mustard, and a pinch of salt and pepper. Blend until smooth and creamy.
  3. Pour the cauliflower sauce into a large pot over low heat. Stir in the shredded cheddar cheese until melted and fully incorporated.
  4. Add the cooked macaroni to the pot and mix until the pasta is evenly coated with the sauce.
  5. Optional: Transfer the mac & cheese to a baking dish, sprinkle with Parmesan or breadcrumbs, and broil for 2-3 minutes until golden brown.
